4/21: Gluten Free Biscuit Test

I had this biscuits with my dinner and thought they were quite yummy!

Even though I liked the biscuits I made last night just fine I still found they were not what I had hoped for. Today I experimented, altered a recipe around and came up with these. They have a great texture but I think I added a little too much flour so they are on the blander side. I definitely will figure this out… just be patient with me! Once topped with butter and jam they were great! I had some coffee and cream to help get me through the rest of my day!

4/20 Afternoon Snack

Coffee and Lemon Meringue Pie (360 calories).

This is why I haven’t been able to drop below 195 pounds (which is what I currently weigh). If it wasn’t for the fact I have a very physical job, I’m certain I would weigh more. Can you see how allowing myself the freedom to eat wheat impacts the calories as well? If I go back through everything I’ve eaten over the past few days, actually being gluten free would have been so much better. It helps me make better choices AND I noticed today, that I’ve eaten so much wheat that my body is beginning to hurt again. Eliminating wheat also eliminated 14 years of chronic unexplained throbbing physical pain.

4/20 Morning Snack

One chocolate cake donut (250 calories) with 1 cup vitamin D milk (160 calories). For some reason I’ve been really craving whole milk.

I wish I could tell you the fried chicken thigh (25o calories) and cheese puffs (130 calories) were lunch but they weren’t! Having to look at all my gluttony is really depressing!

4/19 Lunch

Skipped my morning snack and went for a healthy lunch. The menu board read Mango Shrimp, which I ordered with a 1/2 cup rice and green beans. ALL LIES. I was given four crummy shrimp doused in a curry sauce that was so unpleasantly hot it ruined the rice. I ended up eating the shrimp (25 calories) and green beans (50 calories) while discarding the rice. Don’t get me wrong, I like curry but my mouth was expecting something milder and sweeter with a little mango… Major disappointment!! Can you guess what I did after work on the way home?
